Slashed breads

Pete made me a lame to slash the top of my loaves with!

Unfortunately, it hasn’t helped much yet, as I’m still a crap slasher!  Next time I’ll try with a lower hydration dough.  The loaf below is a 50/50 spelt/white sourdough, bulk proved overnight.

100% Wholemeal

Made with sourdough starter and some gorgeous freshly milled wholemeal flour I’ve just received.  The dough was all wholemeal (with the exception of the starter), and was given an overnight bulk prove before being shaped into four 520g loaves.  The long rise has ensured light, well risen loaaves with a fine textured, tender crumb.  Really [...]
